I usually buy from the manufacturer directly, or from Camille Fournet stores if I travel to Tokyo.

I think T2 would be able to answer your question.

how much you want to spend and for which watch, you didnt say?

For exotic skins,

A good inexpesive yet beautiful option is lizard skin.  
In between there are many others, eg. stingray, ostrich, sharkskin, snake, even chickenleg and deerskin.etc..

a hot fave is crocodile skin, as it looks luxurious and is easily abailable in many different colors and sizes.  Depending on the look you want, yo can choose the part of the croc to use. Belly, back, legs etc...each area has a different texture and will achieve a totally different style.  
my choice is usually the bellyskin as it is flattest and most elegant looking. 

Alligator similar to crocskin is alo easily available but twice the price.  Most luxury brands use alligator skin. Eg. patek Rolex AP VC JLC etc...

I use several custom strap makers located in Italy, Spain, Vietnam and Singapore.  European made ones are the best in terms of quality. Price varies but they tend to be more well made even when at the same price point as others.
vietnamese made ones are low priced and quality lacks accordingly. They is still very well made, no issues.  The very highend vietnam ones are world class of course. Price also quite world class.

Singapore made ones are just expensive for what they are , stitch for stitch.  However you get to really see what you are buying and quality wise, the good ones are as good as their european counterparts anytime.

this is probably not the biggest watch but for a “dress” watch, 39mm (or 38.5?) is definitely not small

Isn’t 38-39mm considered just nice ( rather not big ) Big is like 40 onwards right ??

Depends on the lug-to-lug. Lange and FPJ dress watches have shorter lug-to-lug as compared to Patek's. When you try on these watches, see if either end of the lugs protrude beyond the edge of your wrist. It's a good idea to visit the boutique/AD to strap on the watches before you buy.

as mention it is some birdfeet, so yes it could be ostrich feet skin.

this is NOT what is termed as Ostrich skin.

this is termed as birdfeet skin.

ostrich skin is more like nornal calf skin except it has circular patterns like holes every few centimeters apart. Thats where the feather grows out from

I hv no doubt yours is real ostrich skin, but its from the feet.   
 cost for such straps is about usd25 plus shipping.  quite Nice and affordable
