Minimum seasoning needed, just little oyster sauce and hua diao wine. Steam Pomfret. The fish is very fresh and meat is soft, but the fishy smell is rather heavy. Lala81 Hypersonic October 26, 2017 Share October 26, 2017 Sounds bit oxymoronic. if the fish is really that fresh, then probably the belly or guts of the fish was never cleaned properly. Actually any steamed fish, i spend a good 5-10mins cleaning off any residual blood or gut material inside the cavity until it's totally as clean as possible. Pomfrets are usually steamed with a sour plum. I usually put it into the cavity. U can add a bit of the brine to the steaming sauce as well. The only way to reduce fishy smell, i think actually u need to blanch with something acidic. Angmohs use lemon when they bake the fish. Chinese can use spring onions, ginger + white rice vinegar if u are blanching. But that's usually for boiled fish soup. Pomfret. Maybe you can try these few basic ingredients to get rid of the smell ... Sour Plum ... Spring Onions (Cut Long Strips) ... Cut Red Chilli (Long Strips) ... Sliced Old Ginger ... Salted Vegetables (Just bit will do) ... Chicken Stock ...Chinese Wine ... Some Traditional Malay Families like to put a piece if Banana Leaf at the Bottom of the Fish to kill the Fishy Smell.
