Excellent chef at work. Made me so hungry for siew ba! Love the colour.

 

OK concluded my 烧肉 experiment.

Used 2 methods of prep.
Method 1 - not blanching the skin and baking the belly with coarse salt layer on top.

Method 2 - blanching the skin on the prior night. Similar to this method. Can see the photo shows the blanched skin

I'm not the biggest fan of siu yuk. Both methods give decent roast pork . Better than market level roast pork. Not as good as the restaurant level especially good ones.
I would say method 2 is superior. My wife thinks it's more juicy. Probably because lower temperature cooking with no foil insulating. Also method one. The coarse salt tends to fall down into the sides and mix with the meat juices. Makes the bottom and sides very salty. Had to trim off those.
I still prefer char siew lol

haha, thanks for the praise. But i think the word chef is overused nowadays especially with all these cooking shows like masterchef.

 

If u can only follow a recipe and come out with expected result and can do it at pro level, ie making 100 dishes a night tasting the same. You are a cook.

If you can deconstruct dishes and create new flavours/ with your understanding of gastronomic science, you are a chef.

Mother-in-law's cooking. The pork belly dish is very delicious.  Good enough to eat it alone with rice only.  But of course, it becomes an unbalanced diet then.

lol! how did u get the Pokemons to appear inside indoor areas? incense or?

a lot of pokemon are inside malls and building mah. Quite common for a restaurant to be around a pokestop.

Pan mee and sarawak mee at face2face city sq. only branch in sg.

 

 

Rating: 8.45678/10

Shiok. Noodle not too hard not too soft. Easy to bite. Personally i like the pan mee more.
