Got a roast pork recipe from a colleague and managed to get it done in less than 3.5 hours.

OK, will try to put a brief recipe here. The original recipe is for 4kg of meat but I use only 1/2kg to try out.

 

RECIPE for 1/2kg Roast Pork

 

1/2kg Pork Belly ~ $8. (tell them you want to make roast pork, get the thicker one)

 

Marinade Ingredients:

- about 1/2 teaspoon white pepper or to taste

- about 1/2 teaspoon normal cooking salt or to taste

- about 1/2 teaspoon 5 Spice Powder or to taste

- about 1/2 cube of Fermented Red Bean Curb (can get from Sheng Siong, about $3.30 per tub)

 

Miscellaneous - for making crispy skin

- 1 teaspoon of normal coarse cooking salt or coarse sea salt

- 1 tablespoon of normal White Vinegar

 

Steps:

1. Thaw the meat if frozen and dab until quite dry with cloth

2. Score across the Meat side with about 1cm depth cut so that the marinade can penetrate better

3. Find some sharp pointed skewer or fork and 'punch' many small 'air holes' on the Skin side (improve the crispiness)

4. Proceed to add in the marinade ingredients in any order on the Meat side, making sure all parts are seasoned

 

5. Next, use a Fan at 'low' to blow directly onto the marinaded pork belly for an hour (flipping 1/2 hour each side)

 

6. Then spread the Coarse Salt evenly onto the Skin side (for added crispiness)

7. After which place the belly with the Skin side below (straighten it along side) on an oven rack (with the metal tray below to collect dripping oil) at the Middle Layer

8. Set the oven at 200C and bake for about 50 min

9. Then, turn over with the Meat side below now and bake for another 50 min at 200C

10. Finally spread the White vinegar on the Skin side and bake for another 15-20 min (monitor for overheating at the same time)

 

Your Crispy Roast Pork should be ready by now.

I have tried another method using Philip airfryer, take 30min to 45min depending on the thickness.

 

The most important part of cracking the skin are "dryness" of the skin. After paper towel it dry, you have to let it dry further (with salt on skin) in your fridge for at least 1/2 day.

My wife marinate 12 hrs n oven it within 0.5 hr

First trial, I tried it cool

 

Rmc 4-5$, outside selling 12-16$

[laugh]

 

Eat it with beer super duper yummy

I try to do it before.... damn F****king salty hahaha i think i added too much Fermented Red Bean Curb

 

No need "Fermented Bean Curb" lah, use salt and pepper alone will do. before oven, just need to clean away excessive salt and it's good to go.
