Gee 1st Gear November 28, 2012 Share November 28, 2012 here's my simple-quick and yet cheap-healthy. ingredients: - small potatoes cut in halves, skin on. - carrot, chopped in diagonal diamond shape or any large chunks - french beans - broccoli in pieces - japanese cucumber/ zucchini - minced beef mixed with minced pork - italian herbs (oregano etc) - mozzarella, cheddar, parmesan cheese - salt & pepper - butter or olive oil (not all have to be there, adjust at will, sometimes i do without meat) basically they are all dumped into baking process with cheese topping. i use grill pan with lid, small medium fire, olive oil to the surface. in layers, first go the potatoes, 5 mins flip to the other side. on with carrot for 3-4mins, then broccoli, french bean & rest of veg, minced meat, herbs and so on. cover and bake for another 5-8 mins. add salt & pepper etc. to taste, & top with preferred cheese. serve hot. Junjie 1st Gear November 28, 2012 Share November 28, 2012 If u guys like salted egg stuff crabs or prawns, can DIY at home... For prawns, Buy large size sea prawns, remove the shells, if lazy, can buy those large de-shelled forzen prawns. Thaw 10-15 large prawns, wash and rinse and pat dry with kitchen towel. Season with dash of pepper, white shaoxing wine (or any cooking wine) and dash of seasame oil for 15-20mins. Drain off the seasoning, coat it well with corn flour and deep fry for 3-4 mins. Drain off and rest on kitchen towel. Now for the salted egg sauce. You need 2-3 salted egg yolks separate from white. 4-5 pcs of curry leaves, 1 pcs of chili padi, I.5 tbsp of unsalted butter, 2 tbsp of evaporation milk (optional) Heat up the wok, melt the butter (be careful not to burn the butter), throw in the curry leaves and chili (not to add if cooking for kids),add the yolks and break it, mix well in the heated wok. Once it's break into sauce liked texture, add in the evaporation milk and give a few good stirs. Off the flame, throw in the fried prawns and give a few good stirs. Dish up and ready to serve. Tips. Before u throw in the prawns, taste the sauce first, if u think is too salty, can add 1/4 tsp of sugar.

Ender Hypersonic November 28, 2012 Share November 28, 2012 (edited) For steak,I buy fresh beef, either rip eye or striploin with lots of fats. But I don't grill them fresh. Keep them in the freezer for a few weeks. Time to grill, just let it thaw, rub it with salt and pepper and grill with butter- Found by chance that fresh beef frozen in freezer for weeks and then thaw taste better. Btw don't know those already frozen in the supermarket don't taste as good. Edited November 28, 2012 by Ender

I know it defies common convention. But those already frozen in the supermarket I agree taste bad. But mine is, I buy them chilled, and froze it my freezer for a few weeks and let it thawed before frying it.

Actually, if frozen beef is stored properly, the taste vs chilled is really negligible. If the beef prior to being frozen is well packed, vacuum packed, stored well, (no freezer burns) defrosted in 1 Degree C, will still retain it's "freshness" and taste. It's the freezer burns that spoils the meat/seafood and many don't know about storing foods in deep freeze. ↡ Advertisement
