this is disappointing ... a leopard does not change its spots ?

if you read about their history, its all about change for the better ... but apparently, some things just don't change.

YUcks. It's not one or two isolated incidents. It has accumulated demerit points over a one year period.

SINGAPORE — The Soon Huat Bak Kut Teh outlet at Simpang Bedok was ordered closed for two weeks starting on Tuesday (May 30), after committing several health violations over the past 12 months.

The National Environment Agency (NEA) posted a notice on the suspension issued to the eatery on its website on Monday, noting that the shop had accumulated 14 demerit points over a 12-month period for failing to keep its premises clean and for preparing food on the floor.

The bak kut teh restaurant was also fined S$1,000 by the NEA. It will be closed till June 12.

NEA regulations state that any food licensee who accumulates 12 or more demerit points in a 12-month period may have its licence suspended for two or four weeks, or revoked.

All food handlers working in the suspended premises would also be required to attend and pass the Basic Food Hygiene Course again, before they can resume work.

“NEA takes a serious view of these offences and would like to remind food operators to observe good food and personal hygiene practices at all times, and to engage only registered food handlers,” the agency said.

Mr Jabez Tan, the founder of the restaurant, took to Facebook on Monday afternoon to give his take on the violations, as well as to apologise to customers.

In his post, Mr Tan acknowledged that his workers did prepare food on the floor. But he said the raw pork ribs were packed in fully-sealed plastic bags, adding that at no point were the raw ingredients “exposed or at risk of being exposed to the floor”.

Mr Tan explained that as the combined weight of the raw pork ribs was 30kg, it was difficult for his staff to lay them on a table to thaw. He added that he and his staff had assumed that the bucket used to store the pork ribs, in addition to the fully-sealed bags, was sufficient to protect the food “against contamination from the ground”. “It was never our intention to violate the guidelines set out,” said Mr Tan, who assured his customers that the restaurant would uphold good hygiene standards after this incident.

Soon Huat Bak Kut Teh has five outlets around Singapore. None of its other outlets have been affected by the suspension order.
