Where To Find Cold Crab In SG

IMO, Don't buy at super market, cos they just mass import and cant gurantee quality, often tiny tiny ones with little meat.

Go to those stalls that specialise in crab, tell them you want for steaming one, usually will be Sri Lankan crab. About $24/kg solid solid ones already. I buy at serangoon central (think it blk263). Of cos sure got other places and stalls with good reputation.

 

1) Put in water for about an hour to let them spit out sand.

2) Put in freezer for them to die.

3) Open the flap at the belly, squeeze out the sxxt, all of it (very important). Damned stinko one.

4) Brush the crab clean, machum washing car like that.

5) Pour shao sing wine, or Dom if you like into the crab.

6) Put the crab in a deep plate to steam about 25 minutes (make sure already thawed), plate is to collect the juices that come out during steaming. Keep the juices.

7) Take crab out, straight into cold water for abouty 10-15secs. Water will reenter the crab, replacing some of the lost moisture, also prevent over cooking by residual heat.

8) Into fridge to chill.

 

IMPORTANT!!!

The juice. Use it to cook porridge, heavenly taste ah. Hence must clean the crab well, especially the sxxt squezzing part.

If you really want to score points with the wife/gf/parents etc etc, deflesh the crab meat, add into porridge.

 

Trial and error once or twice, you will never pay at restaurants anymore.

I've this nagging question.......

 

Crab roe is hard and orange in colour and found only in the female crabs. Sometimes, I see some (dark) yellowish watery stuff along in the crabs. Are these sxxt?

There's one along Geylang, I think its Lor 1. The place is called sin ma.

 

They serve their cold crabs with a kind of sauce that compliments the crabs... Worth to try.

 

But I would also suggest that you steam the crabs and chill it in the refrigerator...

It's Lor 3. Lor 1 is the bus terminal [laugh]

I recommend Lee Kui (Ah Hoi) Restaurant for nice cold crabs. Thumbs up!!

 

Lee Kui Restaurant is found at Mosque Street, about 5 mins walk from Chinatown MRT (NE4) station.

Mong Heng ...i think most Teo Chew resturants serve cold crab....but if you want hairy crab go Capitol Resturant at Chinatown...i think its on Keong Sia St
