Here's one argument why fresh meat tastes different from frozen meat:

- Over 60% of the weight of meat is water.

- When water freezes, it forms ice crystals.

- Ice crystals severely damage the cells of meat on a microscopic level.

- This damage will affect the taste, juicyness, and texture of the meat.

Chilled pork are from freshly slaughtered pigs at Jurong abbatior (daily except on Monday) whereas frozen pork are shipped from frozen inventories sitting in warehouses overseas.

the ice crystals damage the tissue cells. if you try fresh fish, the meat is very firm and tend not to break apart easily. frozen fish after you cook, the meat is soft and breaks apart easily. same with chicken and pork.

but now a days no choice. freshness is a price we have to pay more and more.. wan to save money, forget about fresh food. overseas, i used to save money by going to the butcher shop at the end of the day and look for whatever they don't want to store for the next day. it doesn't taste quite as good as fresh, but it is not frozen.

Singapore consumes about 4000 pigs per day - 75% are frozen pork. The remaining 25% or 1000 live pigs are shipped in daily from the Pulau Bulan (off Batam) pig farm (where it is rumored that a certain familee has a controlling stake).

Even our fresh pork tastes different from that in Thailand, Vietnam and China. This is mainly because AVA has a cap on the slaughter weight of the pigs (I think it is <100 kg live weight per pig) - in line with the lean and healthy food campaign.

I don't know if anyone notice, but last time the pigs from Malaysia before the ban and the pigs from Indo taste differently also..

Piggies from the north are banned - todate, only pigs from Pulau Bulan are allowed although AVA has been around the region auditing pig farms for many years. Maybe this has got something to do with the licensed importer?

frozen meat surely taste not as good as those fresh ones. whether its poultry, red meat or whites ones.

when i was working as a cook, we normally remove the meat from the freezer at nite before we close up and leave it in the chiller. next morning the meat will be thawed liao. if we rushing for time then we just throw it in the sink and run tap water thru it.

but the second way i realised that the meat will have a frozen meat smell. and the meat not so tender.

but the above 2 ways still wont allow the meat to taste better than fresh ones.

my 2cents worth. [scholar]

nah... generally all meats.

take for example. u buy 1kg of live tiger prawns. u cook 500g and keep 500g in the freezer.

1-3days later u cook the remaining. u will realised that the meat not so juicy and the shells not so easy to peel off.

this is why i think many aunties actually do mktg everyday instead of once or twice a wk.
